    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over time BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

I guess that is another favorite of mine. How dark do you like it. 75% cacao seems to be a good level for me. I had some 90% the other day that I could only nibble.

Completely agree! My wife sent me to work last week with one of those milk carton sized Malted Milk Balls and by lunch time they were gone! 6 hours later I just about asphyxiated the dogs with the fallout!
I'm going to remember this post, because Sarris Candies of Claysville, PA makes the greatest malted milk balls ever. I'll try and snag you a box around Easter time!!

Actually I stick to around 63% level. Some of the better quality chocolates are good at 70%. Higher than that I have noticed they get overly bitter.

I have 99% as well as beans! :thumbsup:
But me usual go to is ~70%.

There is a local chocolatier that only uses Callebaut. We got turned on to them years ago and it has been all downhill since. . .:rofl:
