I like the idea of dedicating a knife and board to my cellar! What knife do you use? I'll likely go with a Shun Nakiri style. I love the idea of German blades like Wusthof or Henckels (I'm very German) but the Japanese steel seem to be noticeably thinner...
Spyderco Endura FFG(full flat grind) folder or Great Eastern Cutlery #23 trapper. If I use a kitchen knife it would probably be my 6" JA Henckels chef's knife.

I have a few carbon steel Japanese fish prep knives that would also work perfectly.

Check out that Shun and let me know what you think. I've never cut a plug of tobacco so I'm not sure what the best blade shape would be. But, you've got me thinking now!
