Check out the A-Maze-N smoker. I have the 5x8 maze and use it to cold smoke in my BGEs. You can literally put it inside any grill or smoker to create the smoke for a cold smoke.Would love to see a picture of your smoking set up too. Have always wanted to smoke cheese.
After its smoked I let it sit out on the counter for 6-8hr like in the pic's. After that, I put the cheese into zip lock bags and refrigerate for another 16hr or so. Then vacuum seal them and then they go back in the refrigerator. I don't touch them for 90 days to let the smoke flavor mellow out.Good stuff! Do you freeze the cheese or refrigerate while the smoke mellows?

I've been told you never want to freeze your cheese. It will dry it out and loose flavor.
