Just got done smoking up 8lbs of cheese.

4lbs Extra Sharp Cheddar
2lbs Mozzarella
2lbs Hot Buffalo Cheddar

Will vacuum seal them up tomorrow and won't be able to try any until 3 months from now. As the smoke needs to mellow out.

Would love to see a picture of your smoking set up too. Have always wanted to smoke cheese.

Good stuff! Do you freeze the cheese or refrigerate while the smoke mellows?
After its smoked I let it sit out on the counter for 6-8hr like in the pic's. After that, I put the cheese into zip lock bags and refrigerate for another 16hr or so. Then vacuum seal them and then they go back in the refrigerator. I don't touch them for 90 days to let the smoke flavor mellow out.

I've been told you never want to freeze your cheese. It will dry it out and loose flavor.

Oh ya

One thing I forgot to mention. When you zip lock the cheese to go in the refrigerator. Leave it partially open to let it breath a little. Then when that's over vacuum seal.
