  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Pig roast today

yeah it came out real nice. Unfortunately we were so busy I didn't get any pics of the finished product. We fed 120 guys with a 120lb. pig and three large pork loins as well. Ther was also cornbread, coleslaw, baked beans, smoked chicken, potatoe gratin, and corn on the cob. we injected the pig and the pork loins over night with the same mop sauce that we used all day and it took about 8 hrs to cook porky.
Mop sauce recipe:
1 cup apple juice
1 cup cider vinegar
1 cup brown sugar
4 Tbs. cayenne
4 Tbs. Chinese five spice
4 Tbs. ground mustard
4 Tbs. celery seed
2 Tbs. kosher salt
and 4 bay leaves
You can adjust this recipe however you like but it makes a nice pork marinade or brine for frying turkeys just cut back on the sugar for the turkeys. enjoy guys.
