• BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over time BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

    I have used foil many times with gas grills, but now that I use the Egg I don't. I stand them up on their side using a rack. Also I have worked on perfecting my bbq sauce for a while.... I add that towards the end of cooking. BTW Brown sugar is a key ingredient.

    I've changed a lot over the years, but I would say the last couple I use a Hungarian paprika based dry rub. I put them in the oven at 200 for hour and half then on the grill for 3-4 hours at 225. I like pork baby back and st Louis style ribs.

    That's a nice size shoulder. My ribs were delicious now back to work..... I'm moving slowly. Over the weekend I bought the Opus Lost city and others.... another hit to the wallet.

    Slowing cooking Ribs and then burgers on the Green Egg. Lots of beer will be drank and going to try the new white label viaje. Oh and going to spend some time on the water. What are you cooking??

    Yes I smoke all the time I used to use an aluminum charcoal grill, but the only problem was I constantly had to add bricket's which dropped the temp every time I opened it up. i.e. takes much longer to slow cook meat. Eventually I just bought the green egg which uses lump charcoal and the...

    The only thing that comes to mind is "shipping" they don't want to take orders for several days because they can't ship. The move to a new warehouse is a big task as I've done this before, but then again we kept everything up and running. Hard to say!!

    I've smoked 6 or so and every time they get better and better. At first it's a little harsh, but then it mellows out with a sweet chocolaty flavor. IMO-- just love em.
