Okay for those of you that know I've been playing with cider and stuff lately. Well applejack can be made at home perfectly legal. You basically take the end product of my high alcohol cider and freeze a gallon of it. Then take that frozen gallon and turn it upside down above another container to catch the sugars and alcohol.

It's like distilling only minus the whole distilling part. It's federally legal and I figure with making 5 gallons what's the loss of one gallon gone to concentration.

Some of the best Applejack, or some people call it "Pruno", was what I confiscated while working in the Federal Prison system.

I wouldn't even know where to begin to tell you what some of those con's used for ingredients!

Any and all of the fresh and canned fruit you can get your hands on particularly the cherries for sugar content, and oranges for the acid. add a bit of water, and yeast. Seal in a trash bag, and let it rot/ferment. when the bag fills with CO2, you let it the gas out and do it 3-4 more times over the next 6 weeks. and enjoy. Or so I've heard.

I know there are recipes easily available online.

The Applejack sounds interesting.
