I decided to switch up the recipe just a bit, I cut out a little bit of the inside bacon and threw some sweet onions into the mix. I tried using a sweet bbq rub and sauce and a spicy hot sausage blend.. Right now it looks delicious!
The recipe calls for it to be thrown in a smoker next, I don't have a smoker so instead I will be using a grill. I have a couple planks of cedar in water right now and I am planning on grilling this right on the planks for the cooking duration.. Anyone that has any experience with grilling on soaked planks have any pointers? Is this a good idea or would I be better just placing it on the grill itself with the planks just thrown in there?
I cannot wait for this tonight lol
