This is true. And I can get Guanciale on Arthur Ave in the Bronx or in Eataly NYC haha.Thats $15 a lb for bacon what a rip off. You can get Pancetta any where, The only thing you are paying for on that list is the " Guanciale".
Awesome, but really pricey!

I made this last month for a party and it lasted about 5 minutes. It's every bit as good as it sounds

We have a butcher that sells half or whole cow and pig. That's the way to go if you have the extra space! It's way cheaper and the meat is soo much betterYou can buy a whole pig for that out here.
I believe it! $600 for 140 pounds of pork might sound like a lot But if you where to go to the grocery store and buy 140 pounds of pork it would cost you $1100 or more.I bought my first whole hog that was free ranged raised and organic fed with no shots this year. Thru a friend at work. He was cheaper than anyone by several hundered dollars. It was 400 for the hog and 180 for butcher and processing. I'm sure others may be slightly cheaper (if your in the middle of Iowa 10 hrs from civilization) but I doubt a whole hog processed at 299.00 is possible......
And btw a 250 lb hog only yields around 140 lbs of pork.
So far yes. Everything is packaged incredibly well. The bacon cooks down like all bacon but yields more per pound finished. Could you tell the difference in quality of meat VS range grocery store pork? We buy package deals (15-30 pounds) and the taste is much better than meat from a grocery store.
