3 hours in and these cheeks have beautiful color. Time to wrap!

Wanted to go traditional but the first meat market I went to didn't have maguey leaves. So banana leaves it is.

Wrapped them in leaves, then because I suck at making it even close to airtight, put the leaf pouch in a foil pan and wrapped in in foil. Now it's time to put on the turkey I dry brined and spatchcocked last night! Both meats should finish at the same time...hopefully.
