Ducks!!!

So I had all of these ducks lying around and I needed to cook them up. I figure I'll do two or three ducks at a time and try different stuff every time. Well, for the first couple ducks I cut breasts into strips and also did two whole breasts. Slathered with bbq, they sat on the top rack of the grill for a LOOOONG time. I've only tried one of the breasts so far (gotta jet to work), but I can easily say this is the best duck I've ever tasted! It was so tender I didn't even need a knife! Most of the time duck is pretty dry.

mmmmmmmm, those look great Tyler....try frying the breast in bacon fat, to a medium pink color. Slice to half inch thickness, and top with a sauce of your choice, tart cherry with chilis and garlic works.

I like to pound out wild game into a nice flat peice.

Then I lay down strips of proscuitto ontop of it. Maybe Bacon.

Then I will put down a favorite cheese. Aged Gouda, maybe.

Season if you wish.

Then I roll them back up and back or grill them off.

Just something to think about...
Now I am hungry though.

haha, the "so I have all these ducks lying around" part made me think u were gonna tell a joke, XD
that looks delicious :p
feel bad for the duck's though
but still, looks very good
