I don't think the acids will make it more hot.....
I probably didnt phrase that well...

I was guessing (I absolutely admit that I do not know...), that the acid breaks down the oils (that contain capsacium) and end up making the peppers more mild...

my understanding(although limited as well) is that the only things that can make things less hot....or kill it....is milk or sugar......
