There are several stories as to where the New Mexican Frito pie actually started.
Some say Sante Fe, others claim the state fair here in Abq.
Traditional recipes cut the bag of Fritos open and pour the toppings in.
The casino where I work sells about a thousand of these a day, with a slightly different recipe.
Start with a paper "boat"
Add two hand fulls of stale Fritos
Cover with a ladle of over cooked canned chili, very little mystery meat but lots of beans
Sprinkle with a shredded cheese like substance, or that weird runny nacho cheese
Cover that with shredded limp lettuce
Add diced mushy red tomatoes
Cover all of that with diced white onions.I don't know where they get them,but they will make your eyes bleed from 40 yards
Add a large serving of sliced jalapeños, or the local favorite roasted green chili
Sprinkle with as much Cholula hot sauce as you can stand, or until your nose hairs turn to ashes
Enjoy this with a plastic spork, just to make sure you wear some
Wash it all down with a dr. pepper.
All this is the May special of the month for only $2.00 !!!

I really miss the football sized burritos from Burritoville in Chicago!

Pupusas rule! Especially when loroco blossoms are in season in Central America.

We often (monthly,j make fractured tacos using Fritos and green salsa. Sometimes add pineapple chunks and use ground pork, cilantro with fresh squeezed lime for that Al Pastor take.

Mmm, plantains...

But honestly I'm a little disappointed B. This title is a bit misleading..

I was expecting marinated brisket or braised pork belly, fresh fried artisanal organic tortillas, candied habenjero and papaya Pico, creme fraiche and foie Gras frijoles...

What a let down....
Some men enjoy the simple things in life @Glassman and don't need all those fancy flavors to be happy.
And some men are just simple like our friend @bwhite220
