Made a chuck roast on the charcoal grill last night. From an Angus cross beef my dad raised and had processed.
Coals to one side. Seared it, threw it in an iron pan on the other side. Let sit in a couple hours till the temp dropped under 200. Came pretty good.

This afternoon took part of it and made stewed beef. Garlic, onions, spices, carrots green peppers, seasoning, Dijon mustard, white wine, beef stock.

OMFG!

I can't believe how good this is!

(there was more, but the wife and kids demolished it while I was working on stuff....)

Spring greens, bacon bits, feta, 2 croutons crushed over it for the flavor, and Marie's basil pesto vinaigrette (So freaking good)

Made a killer meatloaf today.
Cooked some bacon, caramelized some diced onions in the grease. Added diced celery, shredded carrots, diced green bell pepper Worcester sauce, egg and seasonings, made it low carb by subbing nut flour for the bread crumbs. Came out amazing.

Also made some mashed cauliflower with butter, cream cheese, green onion, hvy cream and spices.

Usually add bacon and sour cream, but didn't have any extra, ready.

The seasoned mashed cauliflower always comes out good, but today I squeezed a lot of the water out and it made the texture much better. Even more like mashed potatoes.

Made a baked Brie yesterday. Added walnuts and cranberries. I had never made it before but when I saw the cheese on managers special for 3.50 I figured what the hell. It turned out ok. I mean, I can’t eat the whole thing or I’ll blow a gasket in my ass, but it’s keeping this wine company pretty well.

Started by browning diced beef short ribs along with bones in olive oil

Onions, green peppers, jalapeños, and garlic, cooked till tender


Grass-fed ground beef added, browned

Simmered in Home-made beef broth and various spices

1 can tomato paste, simmered til thickened

Will be serving with grated sharp cheddar
