Turned out good. The beer didn't hold up though, definitely needs to be something a little stronger in the flavor department. Maybe I was a little heavy on the pepper, but I like it that way.

Homemade Shrimp Creole. It was great, but if you are not from around here it can be a little hot.
Never hot enough! :thumbsup:

Way to come correct, coonass! :grin:

Made a shrimp etouffee last weekend. Going to make that again this weekend... that or BBQ shrimp.

Tonight was fresh Tilapia, with oven roasted red potatoes and green beans w/sliced almonds.

Tossed the potatoes with extra virgin olive oil, fresh cracked pepper, cayenne pepper and a Mrs. Dash 'No MSG' seasoning blend. Here's how they looked prior to going into the oven:



I seasoned my filet with a cajun rub, fresh cracked pepper and cayenne. The wife wanted her typical lemon pepper and I also put some cayenne on it just to piss her off. Tilapia was seared in a cast iron skillet, flipped, then put in the oven at 375* for 25 minutes. Here's how it look prior to cooking:



When all was said and done, I transfered the potatoes back into the tossing bowl and added minced garlic. Tossed once again, then began to plate. Here's the finished product:



Dinner was awesome!

Chicken parm and regular canned green beans cooked with onion powder and minced garlic.

Tossed some angel hair pasta with grilled chicken, carmelized onions, garlic, green peppers, fresh mozzarella, basil, and olive oil. It was awesome.
