I've almost decided that feeding and tending my woodburner during a big butt stall isn't worth it. When it stalls it gets wrapped and into the oven at 225 to finish.

Yup. I can't stay up all night anymore. I literally feel sick the next day.

Things are off to a standard start, spare ribs on the grill for an indirect session. 1 hour unwrapped, flipping and rotating every 15 minutes.

45 minutes in foil. That's a little longer than I usually would go, but for today's purpose I actually need them to technically be slightly overcooked so that the bones pull out cleanly from the intact rack. 15 minutes unwrapped to finish and then it's go time.
