  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

I like to go to 203 internal temp. The “faux cambro” method in towels and a cooler works great! I used to do that for years and years. Finally just started keeping it in the oven at 170 or 175 to rest for a few hours. The faux cambro is better, but oven is easier haha.
I did the oven at 170 but ran out of time so it only got about 1.5 hours in there. I was being lazy and started it just before 10 am instead of 6am.
