That tough skin acts like a Steamer bag. They pulled chunks out of the back and tail, ate it as it came out of the shell. There again .....didn't try it but my friend that runs the plant says that the people that eat seem to enjoy it.
Won't lie...I'd try it. :LOL:

Come fall, squirrel and rabbit is a staple at the house, with biscuits and white gravy. And fried. And broiled. Seen it done in a crockpot and used the shredded meat on tacos. (Meat Eater with Steve Rinelle). I like to put rabbit in gumbo too.

Now, I will draw the edible line....we have an invasive species of snails here recently, Apple Snails. Apparently they are edible and some cultures love them.......but it’s not my culture and I just kill them.

And the snail. Oh man you had me at biscuits and white gravy. Thinking of trying a squirrel hunt soon.

They started showing up a couple years ago near southern tip of La. and New Orleans drainage canals are chocked full of them and in the last 12 months they’ve moved north to my fishing areas.

yes, the pink hubba-bubba chewed looking eggs sacks about 18” about the water line. We spend a goodpart of our outings smashing them.

The Mexican workers that pick crabmeat at the plant by the camp take them out of the bayou and throw them on the BBQ pit, whole, No cleaning, no cutting, nuthing. The gar blows up to about double it's original size, When the steam starts escaping from the anal vent it's done.
