Pulled some brisket out of the freezer from one I smoked 2 weeks ago. Wanted something different than sandwiches. Found a version of this online. It used crescent rolls baked flat for 10 minutes. Layered canned corn, chili beans, brisket and bbq sauce and baked for another 12 minutes. Added cheese for another 5 minutes. Topped it with green onions and fresh cherry tomatoes from the garden. Turned out pretty damn good and was an easy dinner for a Monday night.

Thanks! It's called a Cowboy casserole. I used crescent rolls instead of cornbread because I was being a little lazy.

Next time I make it in going to skip the bread part. I think it would be great wrapped in a leaf of romaine lettuce.

Pretty good.. A little lighter and tangier than a Bordeaux almost like a light zinfandel. Good for something different once in a while.

It's definitely worth trying! Like crawfish, it's less "filling meal" and more "good excuse to order a bucket of beer and chill for a few hours".
