  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

3 big flat iron steaks that I've filleted down, rubbed w/ my homemade taco seasoning (yesterday) and letting rest overnight. They'll go on a hot grill and turned frequently while drizzling w/ lime juice. Cooked to med-rare and sliced on the bias for Fajitas.

Grilled up some pork burgers with ginger and chives mixed in then topped with a schiracha mayo. Awesome. Also had a baked potato with it that I used rendered bacon fat on instead of butter.

Animal fat and protein is back in as a healthy choice in case you didn't hear. I'm glad the medical community finally caught up with my eating habits. I had a hard time believing canola oil was better to cook with than butter when humans couldn't easily utilize the oil in canola seeds for most of human history. So eat up your eggs, red meat, pork and butter.

That rotisserie is sweet King Kill.
Going with Burgers and italian Sausages topped with melted swiss, with some green peppers, onions, and mushrooms. I also opened up some of the casings for Italian Sausage Burgers in lieu of regular sausages.

I have a rotisserie too and I look for excuses to use it. I love using it. I highly suggest one if you can swing it on your grill. It's become an annual tradition for my family that I cook a leg of lamb for easter on the rotisserie. It's a yogurt marinated leg with lemon juice, rosemary, garlic and olive oil. Then I baste it with rosemary branches as a brush and crushed garlic and olive oil. Comes out nice and pink and delicious.

I think a sirloin roast with garlic salt and pepper is next up for a rotisserie ride. First and only time I've had sirloin done like that was at a Churrascaria and it was awesome!

Ribs hit the smoker at 10am... 2 whole chickens will go in there with the ribs about 1pm...

Smoking over fresh cut pear today... Yum!

Birds need about another 30 minutes on the heat and then will be ready to rest for about 30... While side dishes get made...

Then ITS ON!
