  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over time BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

  • I am thankful for all of my BOTL friends! Everyone please be safe and enjoy your time with family, friends who however you are choosing to spend the day!

Last night was tuna scallopini with a fennel, pomegranate vinegaretye paired with an Austrian Gruner Veltliner. Incredibly fresh, flavorful and beautiful dish.

picked up some great (super fresh) gulf shrimp and some ahi tuna tonight and made sushi... yum!

yeah.. Ive gotta figure out a way to get to Atlanta and convince MDSPHOTO to invite me to dinner :)

I kept it super simple.. I just threw a couple of teaspoons of olive oil in a pan... got it super hot (burner on high).. and then threw in the steak (it was about 3/4 lbs after cutting enough off of it to make sushi last night).. I let it sear for about 2 mins on each side (just long enough to get it slightly above room temp in the middle).. then splashed it with a little terriyaki and a few toasted sesame seeds about 30 seconds before I pulled it off the heat.. (just long enough to warm the sauce and seeds up.. but not really "cook" anything...)...

threw it all on a bed of greens... and inhaled it in less time than it took to prepare it...

from the time I turned the stove on.. to the time the last bite went down the gullet.. was about 8 mins start to finish :)

We've been "iced-in" here in Hotlanta for 2-days now so made something hot and spicy for dinner last night, a little jambalya.

For Valentine's dinner made my wife chicken marsala with prosciutto and wild mushrooms. A bottle of Mer Soleil chardonnay was an unbelievable pairing with the butter in the dish echoed in this oaky, buttery chardonnay.

I tried to pull out all the stops for my wife last night. Bacon wrapped scallops with a spicy mayo dip and grilled swordfish with sweet Thai chili glaze. it turned out pretty damn good.
