If anyone in the DFW plans on participating and wants some company/pair of hands on brew day let me know, I've done extract for a couple years but haven't seen an AG setup in person. I personally go with extract + grains/mini mash but am looking at switching to AG this year. Got rid of my fermentation chamber before moving here so unlikely that I'll be brewing this in the next couple months.

That would be a good, proven recipe. Recipe appears to be at the link below. Can anyone confirm from Zymurgy? It looks to be a 23.8 gal recipe. Time to scale!

That looks like the recipe. My brewclub was actually supposed to brew this for a club brew yesterday but got rained out. I have the recipe scaled down on my Beersmith but I don't have my comp at the moment. I can post it up later if needed.

An OG of 1.100 is going to have to age for a really long time before it's ready. Gordon Strong has a really nice looking RIS recipe in his latest book.

Is this a beer an amateur can brew? I have all the equipment and have brewed a wheat beer a few years ago. I really want to participate in this.

As long as you aerate like crazy and pitch a lot of fresh yeast I don't see why not. Just take the time to plan everything out so you have a smooth brew day. If need be we can convert whatever recipe gets decided on over to extract if you wanted as well.

Here is my RIS recipe:
5 gal batch
OG: 1.103
IBU: 53
Grain:
16lb Marris Otter
2lb chocolate malt
2lbs flaked oats
1.5lbs roasted barley
1.5lbs special b

Bittered with 1.5oz magnum at 60min

Usually I add coarse ground coffee and bourbon soaked cacao nibs in secondary.

I do a massive pitch of yeast and keg carb this one usually and it can be enjoyed usually a month or so after brewing but does age well

Heres the scaled recipe for the '14 NHC Gold RIS. Some things are slightly rounded so the grain weights weren't odd fractions.

Batch Size - 5.25
OG - 1.088
FG - 1.018
IBU - 70
ABV - 9.3%
Yeast - WLP001/Chico/US05

Grain Bill....60min mash @ 152

14# 9oz Maris Otter
1# 6.5oz Roasted Barley
1# Special B
7.5oz Pale Chocolate malt
7.5oz Chocolate malt
7.5oz Crystal 80


Boil - 65min

1.5oz Warrior @ 60min
1.5oz Kent Goldings @ 10min
1.5oz Kent Goldings @ flameout

Since the recipes seem pretty similar I took @HIM* recipe and modififed it slightly to round out the numbers to the nearest half pound for those of us that need to order some specialty grains to brew this.

Batch Size - 5.25
OG - 1.088
FG - 1.018
IBU - 70
ABV - 9.3%

Grain Bill:
14.5# Maris Otter
1.5# Roasted Barley
1# Special B
0.5# Pale Chocolate malt
0.5# Chocolate malt
0.5# Crystal 80

Mash @ 152

Hop Schedule:
1.5oz Warrior @ 60min
1.5oz Kent Goldings @ 10min
1.5oz Kent Goldings @ flameout

Yeast - WLP001/Chico/US05


For extract brewers, substitute either 10lbs LME or 8lbs DME for the Maris Otter and steep the remaining grains for ~30min @ 152F then proceed with your process.

Thanks, Stogie! I'm in, but probably not until after Christmas. Are we going to propose a target weekend or is this just do it when you can?

Holidays are crazy time for a lot of folks so I would say target to get it fermenting by the end of Jan if at all possible.
