  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Sounds interesting. Smoke the whole head? What kind of dish are you talking about, please?
At my restaurant we smoke the cabbage for Cole slaw. I slice the cabbage on the slicer but it can also be done by hand. I smoke it for about 7-10 minutes in an aluminium pan turning the the cabbage and smoking for another 7-10 minutes. Then straight to the fridge to cool.

Wow, that would also be worth trying in some other dishes. I'll keep that in mind. Thanks.
