sounds like it might be a good way to go. Whats the avg weight of a side of beef?
really depends on the cow... grass fed or not.. heifer or steer... heirloom or some monster steroid pumped black angus, etc..

but.. 250-400lbs on average....

I raised dairy beef for years and our cows averaged 900lbs hanging weight...so 450 per side. Heirloom cows are usually 20% smaller so closer to 700 or 350/side.

First time using the grill this year. Chicken and asparagus. Feels good to be back outside grilling.

This is everything I grilled yesterday. We had 2 sweet potatoes, 2 yellow potatoes, asparagus and a large flank steak. Was a great meal for the whole family.

Had some burgers on the grill.


16 ounce silver bullet in hand.


My 6 year old wanted to try goober burgers, he loved them. And I agreed, they were pretty darn good.

If you were in chat with me last night, you know what I did today.

Nice dry rub to start off


Got some smoke rolling


Halfway thru I like to put them in a trey and cover with foil


4.5 hours later all done


And they were good


Oh and these guys were buzzing my neighborhood for the air show nearby.

Kabobs, beef, chicken, shrimp, zucchini, onions, tomatoes, then some sliced sweet potatoes. Dessert was grilled next. Bananas and pineapples topped with vanilla ice cream.

8lb brisket ready for prep....




Trimmed and slathered in goodness for 12 hours...

Hits the smoker early in the AM tomorrow!

Fire was ready at 0730... Smoking with fresh pear wood today... Should be ready to pull this bad boy in about 8 hours.. Then let it rest for about and hour.. Then the feast begins!
