Aw hell, I've spent a fair bit of time cookin' this weekend.

Friday night, I sliced up a tip roast and started it marinating for beef jerky.

Saturday morning, I started that off in the smoker and got started on making 6 or 7 quarts of chicken and dumplings. After that was done, I trussed and rubbed down a pork tenderloin to cure in the fridge for the next three weeks. That'll get smoked to make Canadian bacon. Finally, at about 10pm, I pulled the last of the jerky out of the smoker.

Yesterday, as is our Sunday morning ritual, I made The Wife® a breakfast of potato pancakes, fried eggs, and link sausage.

This morning, since we had the day off together, we made a potato and sausage frittata. We haven't decided on what to do this evening.

It must be great to eat at your house. All these smoked meats, good breakfasts. What time is supper?

Hell...quit talkin' about it and c'mon up! :rofl:

I failed to mention that Monday afternoon, The Wife® suggested I thaw out the turkey breast I smoked back at Christmas. So, turkey sandwiches, it was.

The chicken was fantastic.

Last night was a healthy batch of Chicken Saltimboca, sided with Angel Hair that was covered in fresh, Roasted Tomatoes/Garlic.
Yes, I admit it.... it was tasty...

I had some tuna out of a can tonight, I eat to get full not for flavor

The prepping, the cooking, the washing....

I think the key is having a well set-up kitchen, which I don't have

geesh. Line a small baking dish with foil. Toss a chicken breat in it. Dump a little garlic salt on it. Cover with whatever salsa you like, Bake at 395 for 45 minutes. Dump grate mozzerella on top of that and melt. Chucks Italian Mexican chicken. Chicken, salsa, cheese all from Costco. Very easy takes minutes, cheap. SOuth beach qualified.
