Some green chiles to make a green chile aioli for pulled pork that goes on at 5am tomorrow. Smoked with hickory

And whipped up some Carolina style sauce for the event as well

Got a pork roast that will go in the smoker as well as a ton of chicken legs and maybe some trout if there is room. Then have a few whole chickens for beer can chicken on the charcoal grill along with dogs and burgers. Nobody leaves my kids parties hungry unless they are vegetarian. Have some portabellas I will do on the grill with some spices, balsamic vinegar, and mozzarella for some family that is vegetarian though. If it weren't for the beer and cigars I'm gonna plow through I wouldn't be able to pull it off.

The pork after being injected and rubbed, sat in the fridge wrapped up overnight, this was right before it went in the smoker at about 5:30am

About 5 hours in

Some chicken legs just got tossed in there

And two beer can chickens just got started on the grill


Will be grilling some burgers, dogs, and steaks later
