I use bacon. Thin sliced works best imo. Thick sliced refuses to crisp up.

Well, theirs some really weird folks out there that don't like smoked meat. A couple happen to be coming over for dinner and I wasn't going to eat semi awesome meat instead of totally awesome meat so....

Five hours ago it looked like this. One hour to go...

The rub is with thanks to @Lomey it looks, smells and tastes like it'll be amazing. I put a little mustard on the ribs before putting the rub on, and the let them sit for an hour or two before going into the smoker. Looking forward to this!
