Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

are u guys just using bacon or prosciutto ? have to admit i tried these abt's many years ago but was not a fan. i think i will give them another go after seeing this post !I use pretty much the exact same thing. Always turns out great.

Well, theirs some really weird folks out there that don't like smoked meat. A couple happen to be coming over for dinner and I wasn't going to eat semi awesome meat instead of totally awesome meat so....Why one in each instead of two in the smoker?

The rub is with thanks to @Lomey it looks, smells and tastes like it'll be amazing. I put a little mustard on the ribs before putting the rub on, and the let them sit for an hour or two before going into the smoker. Looking forward to this!
