Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

I soaked them for a few hours this time. Next time will do overnight. I will make a jalapeño cream cheese dip next time too, but these are going to be a staple from now on, turned out amazing.So do you do a quick soak in the buttermilk before you wrap them in bacon or so you full-on marinate the meat overnight?

Reason I don't smoke brisket, but will try someday, is because it's to big and it takes forever. Plus all the store sell huge brisket pieces. If I owned a pellet smoker I'd have no problem taking on anything tho.Anybody ever smoke brisket? I don't have a smoker but I have been considering getting one as every so often I watch videos of Franklin barbeque in Austin, TX and their brisket looks like gods gift to meat lovers. I don't see too many home barbequers doing it though so I wonder if it's just not feasible for some reason, maybe too large perhaps.

We do a brisket probably ever month or 2 in summer/fall time. It's easily a 12-14 hour smoke time. Gonna have to check out these videos...Anybody ever smoke brisket? I don't have a smoker but I have been considering getting one as every so often I watch videos of Franklin barbeque in Austin, TX and their brisket looks like gods gift to meat lovers.
