Got family from Montana in town coming over today for BBQ, so I threw in a pork butt with my famous "Hooligan Butt Rub"

So do you do a quick soak in the buttermilk before you wrap them in bacon or so you full-on marinate the meat overnight?

I soaked them for a few hours this time. Next time will do overnight. I will make a jalapeño cream cheese dip next time too, but these are going to be a staple from now on, turned out amazing.

Anybody ever smoke brisket? I don't have a smoker but I have been considering getting one as every so often I watch videos of Franklin barbeque in Austin, TX and their brisket looks like gods gift to meat lovers. I don't see too many home barbequers doing it though so I wonder if it's just not feasible for some reason, maybe too large perhaps.

Reason I don't smoke brisket, but will try someday, is because it's to big and it takes forever. Plus all the store sell huge brisket pieces. If I owned a pellet smoker I'd have no problem taking on anything tho.

We do a brisket probably ever month or 2 in summer/fall time. It's easily a 12-14 hour smoke time. Gonna have to check out these videos...

Usually takes 12-16 hours but it's well worth it.

I have a Weber master touch I smoke my meats in. Great grill but I have monitoring the temp, haha. I can barely handle 5-6 hours on that. Imaging 12-14 I'll shoot my self.
